Chinon Vin Mousseux de Qualité La Cravantine Domaine Fabrice Gasnier 2023 NJ
To get things started, the biodynamically-farmed Brut Rosé from my friend, Fabrice Gasnier, is just about the most perfect wine for every appetizer, from the Salade Bettereves and Asperges Lyonnaise to the Seared Foie Gras and Paté. Exceptional, handmade sparkling wine like this is always guaranteed to form a happy alliance with good food, so don’t count it out for the rest of your dinner either!

Now, one of my favorite under-the-radar regions for French white wine is the southern Rhône. It’s unusual to find a lot of white wine in this sunny, Mediterranean-influenced part of France, but the best producers here can pull off white wines with elegance, freshness, and vibrancy. The Côtes de Rhône Blanc from my friend Anthony Jaume is one of those unexpected, overachieving white wines from the southern Rhône, and one of my go-tos for anything and everything during the springtime.

Pernand-Vergelesses Domaine Cornu-Camus 2024 NJ
Then, I’m a sucker for red Burgundy any time of the year. The one challenge in Burgundy is keeping exceptional, real-world priced wines on our shelves, given such limited supplies. But the gorgeous Pernand-Vergelesses 2024 from my close friends Lydia Cornu and Christophe Pertuzot has just arrived, and I can’t think of a more perfect elegant, fresh, and vibrant Pinot Noir to enjoy alongside Ezra’s L’omble aux Épinards or Tajine de Poulet.

And lastly, since this is the time of year for the freshest local lamb, I can’t resist suggesting a classic red wine from Provence. They love their lamb in the part of France, and so let’s head right to the tiny village of Rognes, in the mountains about twenty kilometers north of Aix-en-Provence. There, you’ll find my friend Guillaume Reynier and his beautiful little organic farm, Domaine Val de Caire, where he grows the absolutely fantastic blend of Grenache, Syrah, and Cabernet Sauvignon that he calls “Lou Cantaï” (Occitan for “Sing it!”). So if you think that Ezra’s Carré d’Agneau Printanier might be in your future, this beautiful red blend from Guillaume would be its perfect companion.
